Smoked, dried and shaved bonito (hanakatsuo) flakes . It is used in many Japanese dishes including miso soup, broth and noodle bowls, simple tofu plates, natto (fermented soybeans), chahan (Japanese fried rice), okonomiyaki (Japanese savory pancake), and salads.
